Every quiller has their own favourite tools and techniques and there are no hard rules. Just try a test and see what you prefer.

DIY Quilling Paper for Letters or On Edge Quilling
I prefer to use thicker paper when quilling letters because it’s easier to glue, and is less wavy when I’m making long straight edges. I cut my own strips at 1/4 inch width using a Cricut Explore cutting machine.

Paper Weight Conversion Guide
70 lb text is the minimal weight I prefer to use, but it’s not widely available, and certainly not in many colors. The main reason why I choose to use Canson Mi-Teintes for larger lettering projects is because of the color choices. I love using Daiso paper because of the weight and it’s very inexpensive, but again, the color is limited.
